Hola! To our Fit friends who are looking forward to the last couple of weeks of this month, packed with parties & outings, so on few occasions when you are at home, its advisable to eat something light & healthy.

For mealtime, we just adore loading up on leafy green salads combined with colorful vegetables, fruits & sometimes a sprinkling of nuts & cheese.

A Caesar Salad is often termed as the evil of all salads to order at a restaurant because of its high-calorie content & yet it’s one ordered by most.

A traditional Caesar salad is loaded with raw eggs, cheese, olive oil & mayonnaise. So here we present to you a healthy version of a Light Caesar Salad Dressing with homemade garlic croutons.
 

After trying this you just might wonder why you ate the heavier version at all! So cheers to a very Happy Year-End.

Ingredients

·      ½ cup Greek style yogurt

·      2 tbsp low fat mayonnaise {Indian brands like Fun Foods are apt}

·      Approx 2tbsp fresh lemon juice {can increase or decrease as per taste}

·      4 cloves garlic {grated or minced}

·      2 tsp Worcestershire sauce

·      1 tbsp extra virgin olive oil

·      ¼ cup grated parmesan cheese

·      1 large iceberg or Romanian lettuce head, roughly torn by hand in bite-size pieces

·      ¾ -1 tbsp Dijon mustard {can adjust to taste}

·      A generous pinch of black pepper

·      Salt to taste

·      ½ cup of homemade croutons made with the bread of your choice [the bread should preferably be 2-3 days old to make crunchy croutons – Recipe given below]

·      200 gms grilled boneless chicken cut into bite size pieces (optional)

Method

·      To make the Light Caesar Dressing, combine and whisk yogurt, mayonnaise, garlic, Worcestershire sauce, olive oil & Dijon mustard. Add the lemon juice at the end as per taste & whisk.

·      If you feel the dressing is thick, add 1-2 tsp of water & whisk again. Ensure that it does not become too watery.

·      Season with salt & pepper as per taste

·      For the home made garlic croutons, the bread should be preferably 2-3 days old as it makes crunchier croutons. Preheat the oven to 350 degree F. Cut or roughly break the bread into small pieces. Put it on a baking tray or wire rack. Drizzle the bread with olive oil & garlic. Gently toss the croutons to ensure they are coated properly. Bake for 15-20 min or until golden brown.

·      Now chop the lettuce or tear it roughly by hand, toss it with salt & pepper.

·      Combine the lettuce, croutons, dressing, chicken pieces (optional) & the grated Parmesan cheese. Adjust salt & pepper if required.
